This creamy pistachio matcha mousse sits atop vibrant stewed strawberries and gets crowned with rich dark chocolate - proving that clean eating never has to compromise on indulgence. Perfect for post-workout recovery or when you want a dessert that works as hard as you do.
Creamy, Matcha Pistachio high-protein dessert ready in 15 minutes - Serves 3-6 people
For the Mousse:
12 oz (340g) silken tofu, drained
⅓ cup shelled pistachios (soaked 10 min in hot water)
2 scoops vanilla protein powder- approx. 60 grams
1 tablespoon matcha powder (ceremonial grade preferred)
¼ cup maple syrup
2 tbsp cashew butter (or 3 tbsps. soaked cashews)
1 tsp vanilla extract
Pinch of salt
3/4 cup plant milk (I used unsweetened soya milk)
For Stewed Strawberries:
2 cups (80 grams) fresh strawberries, hulled and halved
3 tbsp maple syrup
½ tsp vanilla extract
For Topping:
· 50 grams dark chocolate
· Chopped pistachios for garnish
Instructions:
Mousse (10 minutes):
1. Prep pistachios: Soak in hot water for 10 minutes, then drain.
2. Blend: Add all mousse ingredients to food processor or high-speed blender. Blend until completely smooth and creamy, 2-3 minutes.
3. Chill: Divide into 3-6 serving glasses and refrigerate while preparing strawberries.
Stewed Strawberries (5 minutes):
1. Cook: Combine strawberries and maple syrup in a pan over medium heat.
2. Simmer: Cook 3-4 minutes until strawberries release juices and soften slightly.
3. Finish: Stir in vanilla, remove from heat and blend once cooled in a blender
Chocolate:
1. Fill a saucepan with boiling water and place a glass bowl over the top of it
2. Break up the dark chocolate bar in the bowl and cook on a stove on low heat until all the chocolate melts, stir to ensure the chocolate doesn’t burn
Assembly:
1. Layer: Spoon stewed strawberries in bottom of serving glasses.
2. Add mousse: Spoon or pipe mousse over strawberries.
3. Top: Drizzle melted dark chocolate on top.
4. Garnish: Sprinkle with chopped pistachios.
Tips for Perfect Layer Separation:
1. Let each layer cool/chill completely before adding the next. The mousse should be well-chilled (at least 30 minutes) before layering.
2. Make your stewed strawberries slightly thicker by cooking them an extra minute to reduce liquid
3. For the chocolate, let it cool for 2-3 minutes after melting so it doesn't immediately sink through the mousse
