Makes 140g of pesto
When people think of adding greens to their diet, they think of things like broccoli, kale and spinach. Did you know that green herbs count as a green? So next time you add parsley or coriander to your meals, go wild and add more!
My kids absolutely love this pesto and when paired with pasta they call it “Mummy’s green pasta”.
I add hep seeds instead of nuts as my kids’ schools are nut-free.
If you don’t like a strong garlic taste (I think we are a bunch of vampires!) then if you microwave the garlic with a splash of water on full power for 20 seconds this reduces the pungency of the garlic to be like roasting the garlic without the added effort. Or you could just add less garlic.
If you want, you can add a green chilli to make this spicy and use it as a condiment to pair with something like lasagna or roast potatoes.
Ingredients
30g parsley
4 garlic cloves
½ tsp black pepper
3 tbsps. nutritional yeast
3 tbsps. hemp seeds
1 tbsp lime/lemon juice
Salt to taste
Method
Blend all the ingredients in a blender with 10 tbsps. water (add more water if needed to make the pesto smooth)
The pesto can be frozen in ice cube trays and defrosted for future use.
