Jeera Soya Sheekh Kebabs & Mint Soya Yogurt Chutney

High Protein Jar Meals

These fragrant cumin-spiced kebabs make the perfect centrepiece for a satisfying plant-based meal. The secret is in the roasted cumin seeds which give these jeera soya kebabs their distinctive earthy flavour (flavour). Paired with a cooling and creamy mint chutney, it's a complete meal that's both nourishing and delicious.


Jeera Soya Kebab - makes 11 to 12 kebabs


Ingredients:

  • 2 cups soya chunks (soaked in hot water for 10 minutes, drained and squeezed) (135g dry weight)

  • 2 tsps. cumin seeds (jeera)

  • 1 medium onion, roughly chopped

  • 6 garlic cloves

  • 1 thumb-sized piece of fresh ginger, peeled and grated

  • 4 green chillies (chilies)

  • 1/4 tsp cardamom powder

  • 1/2 tsp coriander powder

  • 1 tsp garam masala

  • 2 tsps. salt (or to taste)

  • 3 tbsps. potato flour

  • 1 tbsp ground flaxseed mixed with 3 tbsp water (flax egg)

  • 1 tbsp lemon juice


Instructions:

  1. Dry roast cumin seeds in a pan for 2-3 minutes until fragrant. Let cool and grind to a coarse powder in a spice grinder.

  2. In a food processor, blend the squeezed soya chunks, onion, garlic, ginger and green chillies (chilies) until you get a coarse paste (not completely smooth).

  3. Transfer to a bowl and add roasted cumin powder, cardamom powder, coriander powder, garam masala, salt, potato flour, flax egg, and lemon juice. Mix well.

  4. Let the mixture rest for 15 minutes to bind together.

  5. With wet hands, shape the mixture into 11-12 small oval kebabs.

  6. Preheat an oven to 200C (392F) and cook kebabs on a parchment lined baking sheet for 22 minutes, turning halfway

 

Nutritional info: If serving 3 people, each serving has 200 calories, 0.5g fat, of which saturates 0.1g, 31.7 g carbs, 17.7g protein, 6.1 grams of dietary fibre


Mint Soya Yoghurt Chutney


Ingredients:

  • 2 tbsp dried mint

  • 1 cup plain unsweetened soya yoghurt (250ml)

  • 1 teaspoon garlic powder

  • 1 tsp maple syrup (optional, for balance)


Instructions:

  1. Mix all ingredients in a bowl until incorporated

  2. The chutney should be creamy but not too thick - similar to a thick yogurt consistency.


Serving Suggestions

Serve 3-4 warm kebabs per person alongside a generous portion of salad and a dollop of mint soya yogurt chutney. The cooling salad and creamy chutney perfectly complement the warm, earthy cumin flavors in the kebabs. Garnish with extra mint leaves and a lemon wedge.
